To be honest, pasta was the first meal I ever learned to cook. I’ve been making it forever and have had many proud {and many not so proud} pasta moments. Being an avocado aficionado, I’m always looking for new ways to incorporate it into my meals, so once I realized I could have my cake and eat it too {avocado + pasta!} I had to share. It’s a perfect meal to serve up on hot summer nights.

The Ingredients {Yield: 2 servings Total Time: 30 minutes}

  • 1/2 pkg 100% whole durum wheat noodles
  • 1 ripe avocado
  • 1 clove garlic
  • 2 tablespoons olive oil
  • 1 cup canned sweet peas
  • handful grape tomatoes
  • pinch fresh cracked s&p
  • 1 slice lemon

The Directions

1. Bring pot of water to boil, cook pasta until al dente

2. While pasta is cooking, mix avocado, peas, olive oil, and garlic in food processor until smooth and creamy.  Then, soften tomatoes in a skillet on med-high heat with olive oil

3. Once pasta is ready, mix with avocado “sauce”, and tomatoes

4. Serve up in an individual size bowl and add squeeze of lemon and s&p
