The Ingredients {Yield: 15-20 squares Total Time: 30 minutes}

  • 1 pkg pitted dates
  • 1/2 cup unsweetened shredded coconut
  • 2 cups chopped walnuts
  • 1/2 cup unsweetened dried cranberries
  • 1 scoop Vega “all-in-one” protein powder
  • 2 tablespoons ground flax
  • 1 tablespoon honey {or agave for vegan option}
  • 1 teaspoon pure vanilla extract

The Directions

1. Toast coconut in pan or oven on low until golden brown, approx. 15 minutes

2. Add dates to food processor with protein powder, process until a smooth paste and set aside in a large mixing bowl

3. Add chopped walnuts, shredded coconut, cranberries, vanilla and flax to bowl

4. Use your hands {you heard me!} to mix

5. Place in pan and smooth to even thickness with smooth side of spoon

6. Drizzle honey over top and sprinkle on any extra nuts and coconut

7. Let set in fridge for 15min then cut into squares and enjoy!

*Squares can be stored in refrigerator for up to 2 weeks
